Healthy Potatoes Puttanesca

Ingredients

• 10 new potatoes cut into two or three pieces
• ground black pepper to season
• 2 tablespoons of sunflower oil to fry the cooked potatoes
• 1 tin of cherry tomatoes
• 1 tablespoon of chopped capers
• 3 tablespoons of sliced black olives
• 1/2 teaspoon of chilli flakes
• 3 anchovy fillets and a spoonful of the oil from the tin
• 1 clove of crushed garlic

Preparation

Put the chopped potatoes in a pan, pour on a kettle full of boiling water, and boil for 15 minutes till tender.
Put the anchovies and oil of the anchovies in a pan, they will melt.
Add the garlic and chilli flakes.
Add the tomatoes and crush them.
Add the black pepper, capers and olives.
Simmer and reduce the sauce and it will thicken.
Drain the potatoes.
Heat the sunflower oil in a large frying pan.
Fry the potatoes till browned.
Put some sauce into a bowl and top with the potatoes.
