Smokey bacon and potato bread

 

Ingredients

  • 4 Rashers Streaky Bacon
  • 75g Grated Cheddar Cheese
  • 3 Cloves Garlic, Crushed
  • 1tsp Salt
  • 300g Self Raising Flour
  • 2tsps Grain Mustard
  • 1 large potato (300g) Grated
  • 2 Eggs
  • 3 tbsps Milk

Preparation

Pre heat oven to Gas 5, 375F, 190C
Grill the bacon and when cooked cut into pieces.
Place all of the dry ingredients including the bacon into bowl and mix together, reserving a little of the cheese to sprinkle on top of the loaves. Now add the eggs and milk and mix with dough hook.
Line a baking sheet with grease proof paper. Make 2 equal round loaves with the mixture on the grease proof. Sprinkle with remaining cheese.
Cook for 20 minutes.
